Coconut Mango Ice Cream

Apologies in advance for no step by step pics of this recipe.. I had no idea it would be such a success. I have also never published a recipe I have invented. So bare with me 🙂

Ingredients

4-5 ripe mangos
1 x ice tray of frozen coconut milk (just the canned coconut milk is fine)
2 x ice trays of plain ice

Method

I used my Thermomix, however this recipe would be easily adapted to a blender.

Place mango and frozen coconut milk in Thermie bowl or blender jug. Whizz it up for about 30 seconds in Thermie on speed 6.

Slowly throw in ice cubes one at a time over another 30 seconds.

When all of the ice is in the bowl increase speed to speed 9 (Thermie uses) and whizz for another 30 seconds or when all of the ice is crushed up and the mixture resembles a beautiful creamy texture.

Serve immediately 🙂

This recipe doesn’t need any sugar added and is perfect for those trying to eliminate dairy but crave something creamy.

Ps.. I had frozen the coconut milk this morning because I opened a can to pour on my Weetbix. You must try it! Throw on a small handful of currants and you have yourself a dairy free breaky delight!

    Woohoo … A recipe for me!! Must adapt for my ice cream maker – eliminate ice cubes!!! Great idea for left over coconut milk too!!!

      Not sure what coconut milk will be like if ice cream maker cooks first?? Just use your blender does the same.
