170 g Weetbix
200 g butter
50 g cocoa
170 g brown sugar
40 g coconut
1 tsp Rum Essence/Real Rum
Crush up weetbix into a bowl with a blender until smooth.
Warm butter in a small saucepan until just melted. (do not allow to brown)
Add weetbix, cocoa, brown sugar, coconut, rum and egg into a large bowl and mix with a wooden spoon until well combined.
Press into a lined slice tin.
Bake in a moderate oven for 15-20 minutes.
Allow to cool and then ice with chocolate icing. (throw a little bit of rum into this too!)
Enjoy with a cup of this absolutely delicious Bondi Chai Latte. I was sent these yesterday to review and are now perfectly addicted!
