Quinoa Salad with Pineapple and Coriander {SPONSORED POST}

This Quinoa Salad with Pineapple and Coriander is DELICIOUS!  You must must try.  Pineapple is such an amazingly good fruit for you and it tastes sooo good.



2 tbs olive oil

2 cups quinoa

4 cups water

Dash of salt

2 cups fresh pineapple, chopped

1 avocado, peeled and roughly chopped

½ cup red onion finely chopped

½ cup fresh coriander leaves

1 cup cucumber, roughly chopped

Juice of 4 limes



  1. Wash the quinoa in a fine strainer.
  2. Place the water, salt and quinoa in a medium pot and bring to a boil.
  3. Reduce heat to low and simmer until water is absorbed, about 20 minutes.
  4. In a medium bowl mix all the salad ingredients and set aside.
  5. Toss the cooked quinoa with the pineapple mixture and serve.

Serves 4 – 6

    Pineapple Cheese Balls …..

    •2 packages cream cheese, softened
    •1 can crushed pineapple, drained
    •1/4 cup finely chopped green bell pepper, or mixture of green and red bell pepper
    •3 tablespoons finely chopped green onion
    •2 teaspoons seasoned salt, or to taste
    •2 cups chopped pecans


    Combine cream cheese, drained crushed pineapple, chopped bell pepper, chopped green onion, seasoned salt, and 1 cup chopped pecans. Chill in refrigerator until firm then shape into a ball. Just before serving roll pineapple cheese ball in remaining cup of pecans. Serve pineapple cheese ball with assorted crackers.

    We love Pineapple Coconut Smoothies. They are super yummy – yoghurt, crushed pineapple, pineapple juice. Ice and dedicated coconut. The kids love them too!

    Rice salad with pineapple and carrot…also the kids love pineapple snow..puréed pineapple and beaten egg whites stir thru then chill:)

    Some of these recipes are really good! My favourite way to eat pineapple is dried then covered in dark chocolate. Dried pineapple is out of this world!!

    My favourite pineapple recipe is a curried tuna with pineapple in it. My Mum makes it, so I don’t know the actual recipe but I must remember to get it off her! Now I feel like it!

    There is nothing nicer than a ring of pineapple on a homemade hamburger. The fresh taste exudes from homemade burgers – adding avocado, ricotto cheese, touch of fresh basil, beetroot and pineapple. Puts an exotic twist to the good old hamburger. YUM!!

    I ‘m not sure of the exact recipe but my favourite is a pineapple and coconut salad. It was made by family friends when I was younger and I have never been able to replicate it. It was creamy with sultana’s etc. It was super yummy 🙂

    I love making Pineapple Flowers!
    You slice fresh pineapple very finely, bake the slices at 110 celcius on a flat tray for 30 mins flip them over and then bake another 30 mins to dry them out (keep an eye on them so they don’t burn or over-dry!)

    Then gently press them into a muffin/cupcake tray to shape them. Leave in the tray overnight or for a good few hours at least.

    It makes beautiful dried pineapple flowers that look lovely as cake decorations or garnishes! 🙂

      Obviously this is very simple to make. Crumb using sweet crumbs and egg wash. Then deep fry and add icecream.
