Sticky Date Ice Cream Sandwich With Ben and Jerry’s

I had the glorious opportunity this weekend to create a little dessert recipe with Ben and Jerry’s Ice Cream.

With my little Sticky Date Pud addiction of late, it made perfect sense to add a bit of flare to it by making the Sticky Date Ice Cream Sandwich complete with Ben and Jerry’s,  Maple Tree Hugger Ice Cream.


Happiness in a tub AKA Maple Tree Hugger by Ben and Jerry’s.  


How the Maple Tree Hugger Ice Cream stayed safe in my freezer until I was ready to unleash it on my creation is still a mystery to me.  For we have a ice cream thief at large.



It could be that the strategically placed Phish Food flavour threw the thief off the scent.  

Sticky Date Ice Cream Sandwich


Ingredients :

458ml Tom & Jerry’s Maple Tree Hugger Ice Cream

250 g chopped dates

1tsp bi-carb of soda

1 1/2 cups of hot water

125G softened butter

1 cup of brown sugar

1tsp vanilla extract

2 eggs

1 3/4 SR Flour

Caramel Sauce

1 cup of brown sugar

300ml cream

1/2 tsp vanilla extract

60g butter


Method :

Preheat oven to 180 degrees C.  Grease and line the base of a lamington tin (25cmx30cm)

Place dates and bicarb of soda into a bowl.  Pour over boiling water.  Allow to stand for 20 minutes.

Using an electric mixer, beat butter, sugar and vanilla until pale and creamy.  Add eggs, 1 at a time, beating well after each addition.  Using a large spoon, fold through the date mixture and flour until well combined.

Spoon mixture into preprepared cake pan.  Bake for 20 minutes or until skewer inserted comes out clean.

Leave cake to cool in the tray.

Remove the Maple Tree Hugger Ice Cream from the tub and stir in a separate bowl until soft.

With a plastic spatula, spread the ice cream out over the top of the cooled sticky date pudding.

Place tray in the freezer for 1 hour (or until ready to serve)

Sauce : Combine all ingredients together in saucepan over a medium heat.   Cook, stirring often until sauce comes to the boil.  Reduce heat to medium low and allow to simmer for 2 minutes.

When ready to serve, cut cake/ice cream ensemble into rectangle pieces and pour a generous amount of hot carmel sauce over the top.




Word Of Warning : the consuming of this desert calls for the wearing of soft waisted pants .. for ultimate comfort/enjoyment.
